The vast majority of savoury recipes include some form of black pepper as an ingredient. Pepper is actually ranked as the third most added ingredient to recipes, after water and salt, and Black pepper was once so valuable that it was used as currency!
All forms of pepper begin as whole peppercorns, but pre-ground pepper is a poor cousin in relation to freshly ground - with ground pepper the taste is quickly lost and the product becomes lifeless.

Black Pepper
Description: From Malabar, this pepper is highly aromatic with a distinct flavourful bouquet. For any appreciation of black pepper it is vital to purchase the whole peppercorns and grind as required - the flavour and aroma of pre-ground pepper is vastly reduced.
Suggested Uses: This product is a favourite for pepper steaks, and can be used as a basic flavouring in almost any dish, including some sweet dishes. It is best not to add too early in the cooking as it then becomes bitter and the delicate aromatic flavours become substantially lost.

Green Pepper
Description: Originally from Brazil, now Malaysia. The pepper is picked while immature and freeze-dried to retain colour and freshness. Quality is very difficult to obtain.
Suggested Uses: Milder in flavour and bouquet than black pepper, and with a light spicy aroma, their herbal flavour blends well with the mild savour of French cuisine. It should always be freshly ground for meats, sauces and seafood. Add at end of cooking or as an attractive garnish.

Rose Pepper
Description: Rose Pepper comes originally from the Madagascar Coast. This tangy flavourful berry was first made famous by French chefs for its light and distinctively sweet flavour. It is the most difficult and expensive pepper to obtain, and its soft texture requires that it be 'coaxed' through the grinder.
Suggested Uses: Rose pepper makes a delightful garnish and is specially suitable for cold dishes or salad decoration. Add at the end of the cooking process.

Seasoned Pepper
Description: Mrs Roger's seasoned pepper is a delicious blend of organic pepper, garlic, salt, and ten spices and vegetables.
Suggested Uses: This pepper is the perfect seasoning for any savoury dish. It is much more than a simple pepper with its delicious array of ingredients, and is especially good added to meat dishes, with hot vegetable dishes, with cheeses or cheese based dishes, and in soups.

Tellicherry Pepper
Description: This organic Indian Pepper is from the northern Malabar Coast. It is considered the world's finest black pepper and is highly regarded by chefs for its robust and especially full-bodied pungent taste. Tellicherry pepper should always be ground fresh to appreciate its full impact.
Suggested Uses: This pepper can be used as a basic flavouring for almost any dish, and is especially good with red meats. It is best not to add too early in the cooking process as it tends to become bitter.
